Stayed 3 days in Hong Kong a couple weeks ago and stayed at the Intercontinental Hotel.
It was fabulous!
Location-
Located on Tsim Sha Tsui (or Kowloon).
It was the perfect location for me. It was right by the harbor off the Avenue of the Stars, so there was a good mix of relaxation and excitement. You can read about places to go in Hong Kong here.
Rooms-
There are many choices in rooms and suites. You can choose between a Pool View or Harbor View. If you have the cash to spend, I would definitely recommend the Harbor View. The room I stayed in had a beautiful bathroom with a giant tub to soak in. After being on a plane for 12 hours, that tub was exactly what I needed. The bed was super comfy and you can request pillow type depending on your preference. My favorite part is the complimentary smart phone that comes with the room. You can make free international calls (to most Countries). It was so much help in guiding me around the city.
Amenities-
A pool and gym are two of my requirements when I am booking a hotel. The Intercontinental Hong Kong has both, and are fantastic. The gym is fully equipped, and clean. And after the workout, there is a spa right across the way to relax in, or just go outside to the pool and hot tub. The whirl pool has a fantastic view of the Harbor.
Food-
So many Michelin Star Restaurants! (SPOON, NOBU, YAN TOH HEEN ) But just make sure you look at the date and time of your stay, because they are not always open.
There is a large continental breakfast available, that is pretty delicious.
Service-
I can’t say how amazing the staff is there. I have never stayed in a hotel where everyone went over and beyond to help me in every way.
